1 T. salt2 T. lemon pepper
1 T. dried basil
1 T. poultry seasoning
2 T. olive oil
6 hens
1 green bell pepper, diced
2 celery stalks, diced
1 large onion, diced
Preheat oven to 450. In small bowl, stir together dry seasonings. Rub olive oil over the hens and baking sheets, then season with dry mixture. Loosely stuff the body cavities with the diced veggies. Reduce preheated oven to 375 and bake for about one hour (or internal temp is 165). Remove from oven and let sit under a foil tent for ten minutes before serving.
