
1-2 c. cooked chicken, shredded/diced
4 slices of bacon, cooked and crumbled
1/2 red onion
1/2 carton mushrooms, sliced
handfull of cherry/grape tomatoes, sliced
2 c. shredded cheese (mozzarella preferred)
a few cilantro sprigs, chopped
salt & pepper
BBQ sauce
Worcestershire sauce (optional)
pizza crust
***I use leftover chicken and just leave in in a Tupperware with a few splashes of Worcestershire sauce over night; it makes it yummy.
Spread dough on a cookie sheet or pizza stone. Spread favorite BBQ sauce to the edges to serve as the sauce. Sauté onions and mushrooms in a skillet until soft and brown, then add salt and pepper to taste (TRUST ME--this makes all the difference); spread evenly over crust and sauce along with cooked chicken and bacon. Sprinkle diced cilantro and sliced tomatoes over the pizza as well. Finally, cover pizza with shredded cheese and black pepper. Bake @ 425 for 20-25 minutes; just be sure the crust is cooked thoroughly.
***Incidentally, pepper on pizza is a "trick" I learned at Camp Lohikan. We had to eat kosher (no meat and dairy products served together--among other restrictions), so the only pizza we were allowed to eat was cheese. I learned a dash of pepper actually made a plain cheese pizza SO YUMMY. I usually eat my pizza with pepper on it now.
